The kids love these muffins! I think just the plain pumpkin muffins taste a little better, but these are healthier!

Crunchy Chicken Tenders with Apricot Dipping Sauce
2 lbs chicken tenders (I cut breasts into strips)
1/2 tsp salt
1/4 tsp pepper
1/4 cup Dijon mustard
1/4 cup mayonnaise
6 cups cornflakes

Sauce:
3/4 cup apricot preserves
3 Tbsp mayonnaise
1 1/2 Tbsp Dijon mustard
1 Tbsp rice vinegar

Heat oven to 450 degrees. In a large bowl, toss together chicken, salt, pepper, mustard, and mayo. Crush cornflakes in plastic bag then transfer to shallow bowl. Dredge chicken in the cornflakes and arrange on baking sheet. Bake for 15 minutes or until tenders are cooked and crispy on the outside. Combine all ingredients for sauce in small bowl and serve with chicken.
My family loved this!! Lucas has been antichicken for a couple of months (except chicken nuggets), but he gobbled this up and loved the dipping sauce. I saw him eating the sauce with a spoon. We will definitely be cooking this one again - yummy!
